In a culinary sense, the past few months have tested our agility and ability to adapt. And while I have been squirrelled away and working on this project way before lockdown, I feel even stronger now that these pages may offer a source of comfort where a lot of people feel out of place, and that’s in the Kitchen.
And when lockdown is over, we’re all going to be looking for the best way to adjust to new normality.
I suggest starting at the dinner table.

Kitchen Instinct is written for people who want to feel like they know what they’re doing.
Having an instinctual approach to cooking is so much more than having ingredients in the fridge and a pot on the stove. It’s understanding the start and the end of a recipe and having the confidence to freestyle in between.
It’s knowing how ingredients talk to each other and how cooking one meal can inform the next. It’s being able to resourcefully pull together a meal with what you have to hand.
It’s the kind of cooking I want all of my readers to be able to do, regardless of their skill level or interest in cooking.

So I’ve put together 13 ½ recipes to help you embrace your Kitchen and fine tune your natural instinct within it.
Kitchen Instinct does not feature revolutionary ideas or recipes that will test your skill and creativity in the Kitchen.
It revolves around a series of easy recipes that I’ve had in my head for years. Basic recipes that I am able to cook on autopilot. Recipes that I feel inform a lot of other useful cooking principles, creating a natural rhythm in the Kitchen.
My goal is that, for example, if you want to roast a chicken or make some cookies but don’t have a recipe you can draw from off the top of your head, you can read my recipe, get to grips with my approach and then build on top of this to go off and do your own thing.
The recipe is then yours. It is your go-to recipe. It’s your instinct.
